Ingredients

  • 2 dl Quinoa (cooked)
  • 2 Tomatoes (chopped)
  • 1 Avocado
  • 2 Shallots (sautéed)
  • 100g Mushrooms (sliced and fried)
  • 100g Halloumi cheese (sliced and fried)

Dressing

  • 1 Lemon (juiced)
  • 1 tbsp Parsley (chopped)
  • Salt & pepper
  • Olive Oil
