Vegetable Soup

There always seems to be the one or two vegetables that have been forgotten about in our fridges. So here’s a recipe that shows you how you can whip up a delicious vegetable soup with almost any kind of leftover veggies you have lying around.
Ingredients
- 1/4 cup vegetable oil or butter
- 1 large onion (finely chopped)
- 2 cloves of garlic (finely chopped)
- 3 cups of leftover vegetables
- Salt & pepper
- 2 1/2 cups of vegetable stock
Instructions
- Gather the ingredients
- In a large soup pot, heat the oil or butter
- Add the onion and cook until soft
- Add garlic
- Add the leftover vegetables and stir
- Add the stock and any seasoning
- Cook until all the vegetables are cooked through, roughly 20 minutes
- Take the soup off the heat and blend until smooth
- Add the pot back on to the heat and cook for another 5 minutes
- Season with salt and pepper
- Serve immediately with some croutons
