Leftover Vegetables Recipes

Vegetable Soup

There always seems to be the one or two vegetables that have been forgotten about in our fridges. So here’s a recipe that shows you how you can whip up a delicious vegetable soup with almost any kind of leftover veggies you have lying around.

  • 1/4 cup vegetable oil or butter
  • 1 large onion (finely chopped)
  • 2 cloves of garlic (finely chopped)
  • 3 cups of leftover vegetables
  • Salt & pepper
  • 2 1/2 cups of vegetable stock
  • Gather the ingredients
  • In a large soup pot, heat the oil or butter
  • Add the onion and cook until soft
  • Add garlic
  • Add the leftover vegetables and stir
  • Add the stock and any seasoning
  • Cook until all the vegetables are cooked through, roughly 20 minutes
  • Take the soup off the heat and blend until smooth
  • Add the pot back on to the heat and cook for another 5 minutes
  • Season with salt and pepper
  • Serve immediately with some croutons
